Adobe have published in the past that multi-touch will be supported on Mobile devices such as Smartphone.  Windows 7 supports multi-touch hardware and is likely to be supported by AIR in the future.

I was able to upgrade a Samsung Q1 UMPC with Windows7 and it’s working faster than the Vista that was previously installed on the device,  see Figure below.

I was even able to install and use Flash Builder 4:
